About us

Jaipur had no
açaí bar. So we
built one.

A small counter on Queens Road, a living moss wall, a neon house over the till, and one thing we were determined to get right.

There is a version of an açaí bowl that is basically a fruit salad with purple sauce poured over it. We did not want to open that.

Açaí is a palm berry from the Amazon basin. It is pulped and frozen at source because it has to be — the fruit does not survive the journey any other way. Getting the real thing to Rajasthan means paying for an unbroken cold chain, and it is the single biggest line on our costs.

We decided early that we would rather run a short menu and get that one thing right than print four pages and cut the corner nobody sees. So the board is six families deep, the pulp is unsweetened, and there is no refined sugar in any bowl we make.

The rest followed from there. Sourdough instead of sandwich bread. Granola baked here instead of bought in. A counter you can see over, so you know exactly what went in.

How we make it

Four steps we do not skip.

01Frozen from the Amazon

Açaí pulp is flash-frozen within hours of harvest and stays frozen the entire way to Queens Road. Break that chain once and the berry is finished — which is why so much of what gets sold as açaí is really a sweetened sorbet blend.

02Blended cold, never sweetened

We blend the unsweetened pulp cold and thick, so it holds a spoon. Sweetness comes from banana and fruit. If you want the honey left off entirely, say the word.

03Granola baked in-house

Oats, nuts and seeds, baked here rather than bought in a bag. It is the difference between a bowl with texture and a bowl with a crunchy topping.

04Built in front of you

Nothing sits pre-portioned in a fridge waiting for a photograph. You watch it get made, which is also why you can change anything on it.

It is written on our menu because it is the whole brief. You should walk out lighter than you walked in — not heavier, and not guilty.

Real açaí, not sorbet

Unsweetened Amazonian pulp, kept frozen end to end and blended cold to order. If it were the cheap sweetened blend, we would tell you.

No refined sugar

Not in any bowl. Sweetness comes from banana, fruit and a drizzle of honey — and we will leave the honey off if you ask.

Built in front of you

Nothing is pre-portioned into a fridge. You watch the bowl get made, which is also why you can change anything on it.

Protein that means it

Twenty to thirty-five grams a bowl. Enough that it works as a meal after training, not just as something photogenic.
