Why we brought açaí to Jaipur
There was no açaí bar in this city. Not one. Here is what we learned building the first.

Jaipur has never had a shortage of places to eat. What it did not have was a counter where you could get a genuine açaí bowl — the thick, unsweetened, spoonable kind you find in São Paulo or Sydney, not a fruit bowl with a purple sauce poured over it.
The problem with most "açaí" bowls
Açaí pulp has to be frozen from the moment it leaves the Amazon. Break that chain and it turns to liquid and loses its character. A lot of places get around this by using sweetened sorbet blends with a little açaí in them. It looks the part in a photograph. It is not the same thing.
We decided early that we would rather have a shorter menu and get this one thing right.
What we settled on
- Unsweetened açaí pulp, blended cold and thick
- No refined sugar in any bowl — the sweetness comes from banana and fruit
- Granola baked in-house, not bought in
- Sourdough for every toast and sandwich
- Built to order, in front of you
